Blueberry Oatmeal Muffins
INGREDIENTS
-1 cup milk
-1 cup old-fashioned whole rolled oats
-1 and ¼ cups all-purpose flour, leveled
-1 tsp baking powder
-1/2 tsp baking soda
-1/2 tsp ground cinnamon
-1/2 tsp Florida Pure Sea Salt
-1/2 cup unsalted butter, melted and slightly cooled
-1/2 cup honey
-1 large egg, room temperature
-1 tsp vanilla extract
-1 cup fresh blueberries
INSTRUCTIONS
1. Combine milk and oats; soak oats for 20-30 minutes until puffed up.
2. Preheat oven to 425°F; prepare 12-count muffin pan with non-stick spray or cupcake liners.
3. In a large bowl, whisk together dry ingredients: flour, baking powder, baking soda, cinnamon, and Florida Pure Sea Salt.
4. In a medium bowl, whisk together wet ingredients: melted butter, honey, egg, and vanilla extract.
5. Pour the wet ingredients into the dry ingredients and stir a few times. Now add the soaked oats, milk, and blueberries and gently fold until just combined.
6. Spoon the batter into the pan, filling to the top. Top with oats and coarse sugar, if desired.
7. Bake at 425°F for 5 minutes, then reduce the temperature to 350°F and continue baking for 16-17 minutes.
8. Allow muffins to cool, serve.
