Slow Cooked Vegan Chili
INGREDIENTS
-½ red bell pepper, chopped
-½ yellow bell pepper, chopped
-½ orange bell pepper, chopped
-1 large onion, chopped
-4 garlic cloved, minced
-1 package frozen chopped spinach, thawed and drained
-1 zucchini, chopped
-1 can diced tomatoes with juice
-1 can garbanzo beans
-1 can white beans
-1 can kidney beans
-1 (6 oz.) can tomato paste
-1 (8 oz.) can tomato sauce
-1 cup vegetable broth, or more if needed
-½ teaspoon ground black pepper
-4 Tablespoons chili powder
-1 Tablespoon ground cumin
-1 Tablespoon Italian seasoning
-1 teaspoon Florida Pure Chipotle Infused Sea Salt
INSTRUCTIONS
1. Place all ingredients into slow cooker on low and cook 4-5 hours.
2. Check chilli. If chili is too thick, add more vegetable broth to desired thickness. Cook an additional 1-2 hours.
