Salmoriglio Marinated Chicken Legs
INGREDIENTS
-1/3 cup olive oil
-½ cup water
-Juice of 2 lemons
-2 clove garlic, finely minced
-1 cup fresh mint, finely chopped
- 2 ½ tsp of Florida Pure Sea Salt
- Chicken legs
INSTRUCTIONS
1. Place all ingredients, except the chicken in a mortar and pestle and blend until well
incorporated.
2. Pour blended marinade over chicken, reserving ¼ cup of marinade.
3. Place chicken in refrigerator to marinate for 30 minutes.
4. Preheat grill on medium heat.
5. Place the chicken legs on the hot grill. Cover and cook for 5-6 minutes or until they easily release
from the grates. Flip the chicken and cook for 5-6 minutes longer. Continue turning the chicken
every so often allowing it to cook evenly. Cook until the chicken legs are firm to the touch and
opaque all the way through, registering 160°F internal temp.
6. Transfer to a plate and let rest for 5 minutes. Pour reserved marinade over rested chicken.
